OREO AND NUTELLA CUPPIES

I made these for my friends last time.  I found them damn addictive.  You should give it a try.  You can definitely play around with the colour of the batter.  I also like blue with Oreo.  You can also add real strawberry purée in the batter if you want to be more fancy.  This recipe is inspired by all the pictures you would see when you Google Image "OREO CUPCAKES".  The idea of having an Oreo cookie at the bottom of a cupcake is just great.  I really don't know whose idea it is since I found so many people doing it nowadays.

I added some tumbles and nutella.  Now let's see the result...  

  
Ingredients (for 15 cupcakes)

12-13 Oreo cookies
1 packet tumbles - raisins (cadbury)
13 teaspoon of nutella

Cake batter
150 g butter
150 g self-raising flour
100 g sugar
2 large eggs
30 ml milk 
1/2 tsp baking powder
1/8 teaspoon salt
1 tsp vanilla essence
1 tsp strawberry essence
3-4 drops pink colouring

Topping
Some chocolate chips

Method

1.  Line your cupcake pan with cupcake liners.

2.  Place an Oreo cookie at the bottom of each cupcake liner followed by three tumbles and a teaspoon of nutella.


3.  Prepare the cake batter as follows:

a)  Sift flour and baking powder together;  
b)  Cream butter,salt, sugar and vanilla essence until light and fluffy;
c)  Beat in the eggs and three tablespoon of the sifted flour simultaneously;
d)  Quickly beat in the remaining flour;
e)  Stir in the milk, strawberry essence and colouring.


4.  Fill the cupcake liners three-quarter full.  Tap the cupcake pan a bit.  Top with chocolate chips.  Bake at 190°C for about 30 minutes or until a skewer inserted in the cuppies comes out clean or with a few crumbs.  (You might see some melted chocolate on the skewer if you insert it too deep inside).


5.  Allow to cool before eating.
